Lemon peel (zest) obtained from the lemon rind (outer skin of the fruit that contains fruit’s
volatile oils), chopped into very small pieces, dehydrated and sifted out. Lemon peel retains
intense lemon /citrus flavor, even when dried. Dried lemon peel is a convenient and shelf-
stable alternative to fresh lemon peel /zest.
For 1 tbsp lemon zest, use 1/3 tbsp dried lemon peel.
